It is getting cold out there! Time to bring the veggies into a heart warming, cozy plate of soup. My cooking style is to look at a picture for motivation, and then create my own version. I can't make myself follow a recipe. It just doesn't work for me. In this case, I just decided to make this soup based on finding a bag of shrimp in my freezer.



For this soup I started with the typical base of lots of onions, garlic, celery and carrots. Then thinking anti-cancer, I added tons of mushrooms. I sauteed that a bit then added chicken stock, scallions, zucchini, carrots, black pepper (to taste), pre-cooked potatoes, and lightly pre-cooked shrimp broken into pieces. I let that simmer for about half an hour, and the final touch was fresh lime juice just prior to serving.



I enjoyed it and even got a thumbs up from the kids! It turned out being a hearty, healthy soup.



I use all organic ingredients except for the shrimp. I even used organic gluten free chicken stock.
